A guest showed up who is not on the list. What is the fastest way to seat them?

Click an empty seat on the chart, type their name and choose Create guest. That adds them and seats them in one step, and the Find Your Seat page and day-of mode show them within a minute.

If nobody has a laptop open, add them from the guest list on a phone and pick a seat from their row. Either way it is one person’s job: two people seating the same walk-in at once is how a seat gets double-booked, and PlanSeats refuses the second attempt.
