Why does signing in on planseats.com also sign me in on pro.planseats.com?

Because they are one account. PlanSeats and PlanSeats Pro share a sign-in, so a planner can move between a client’s chart and the Pro workspace, and a couple invited by a planner opens their event without a second password.

Signing out on either site signs you out of both.
