Can I turn the Find Your Seat page off, or change the link?

Yes. Pause it from the event page and guests see a closed notice until you resume; nothing is lost. Regenerate makes a brand-new link and kills the old one, including every QR code already printed, so it asks you to confirm.

Pause is for "not yet": a page turned on while the seating is still changing. Regenerate is for a link that got out before you meant it to.
